lambic - Gueuze

3 Fonteinen is a Belgian brewery, which specializes in Geuze and Kriek beers. It was founded in 1887 as a geuzestekerij, a place where Geuze is produced by blending old and new Lambics. The brewery is situated in Beersel, near Brussels and produces classic versions of both kriek and geuze. Apart from using its own lambic, 3 Fonteinen uses lambic made by Boon, Girardin and Lindemans for its geuze. 3 Fonteinen is one of the few remaining geuzestekerijen.  LAMBIC A beer style produced from spontaneous fermentation from at least 30% unmalted wheat, in Oak scask (traditionally).  GUEUZE  A style in which one, two, and three year old lambics are blended.  In Lambic beer Lactobacillus is vital for their production, which is strain of lactic acid bacterial. Lambic beer are distinctive for their notes of Brettanomyces, a stray of yeast in the fermentation of Lambic that reduces the residual extract and helps give their unique flavour.  This 3 Fonteinen Is an ...
