Pantom a project between Italy and Australia


Pantom 

is a project done in 2019 from the Sardegna producer Panevino Gianfranco Manca located in the town of Nurri in the south of the Island a bit further north of the city of Cagliari. 

2018 was for Gianfranco a poor vintage in his vineyards due bad weather, so he decides with the help of his Australian importer Giorgio de Maria to do a vintage in South Australia on the famous Basket Range "Natural Wine" district. 


So the Project Pantom is a wordplay around PA Panevino ANT Anton "Lucy Margaux" TOM " Tom Shobbrrok. 

Anton and Tom make him comfortable and help him outsource truly exceptional grapes from Adelaide Hills and South Australia, and collaborate with him on the production of the wines for this project. 


2019 Jet Lag  

100% Grenache from Vine Vale in SA

30 hours of skin maceration with aging in Tonneau approximately 800L, the idea was to make a PET NAT so to strengthen the sugar in the bottle for a second fermentation,  they made a cherry juice from organic farming in the Adelaide Hills just 30 KG in total. 

Gianfranco Manca was feeling the Jet lag from flying to Sardegna to Australia; here the name of the cuvee.


2019 Changing 

Chardonnay and Semillon from Vine Vale Barossa, and little portion of Sauvignon Blanc from MacPie Spring in Adelaide Hills. 

Stainless steel, free-run juice, after fermentation has been added to the Cuvee the bunches and skins of the "Wild Man" Cuvee of Anton Van Klopper a Cuvee 100%Sauvignon Blanc, to lifted and give texture to the wine. 

That's the name coming from the changing profile of the wine during the making process. 


2019 Merlo Grigio 

Merlot and Pinot Grigio fermented on skin and aging in one Tonneau of 800L. A juice red for everyday drinking'. Fabolous Glou Glou..
